Similar in size to a partridge, the pigeon has a darker meat with a gamier taste. It is available fresh all year round sourced from local Yorkshire valleys. The rich flavour is from its natural wild diet of berries, acorns, and buds. Chef recommends to either pan roast the breast, or oven roast the bird whole.
