HOW TO COOK THE PERFECT EASY CARVE DUCK

- Preheat your oven to 140c fan (160c without).Sit your duck on a small oven or cooling rack inside of a deep roasting dish. Gently prick small holes all over the duck with a skewer or cake tester to allow the fat to escape while its cooking.
- Season the duck with salt and pepper and place 2 cups of water in the base of the roasting tray.
- Place the duck in the oven and cook it for 20 minutes per 500g.
- After the initial cooking time, increase your oven to 210c and roast the duck for an additional 15-20 minutes to enable the skin to crisp up.
- Remove the duck from the oven and rest for 25-30 minutes, loosely covered with tinfoil.
- Before carving, save the roasting juices and set them aside to cool. Use the fat from the top for your roast potatoes and the juices can be stirred through your Christmas gravy!
- To serve – remove the legs from the duck and shred them with 2 forks. Slice the stuffed breasts and stuffing into slices and serve with a rich, homemade gravy.
